This is a great way to ensure that your diet includes foods which have good bacteria in them, which is good for your gut health. Think of it as the vegan alternative to drinking one of those little bottles of probiotic yoghurt drink.
Coconut Yoghurt

- 1. You will need a tin of coconut milk (full fat) and a packet of agar agar flakes (vegan gelling agent derived from a type of seaweed – buy in health food shops)
- 2. Sprinkle 0.5tbsp of agar agar flakes over the coconout milk. Heat the milk until boiling without stirring. Simmer, stirring occassionally, until flakes fully dissolve (5-10mins). Then leave to cool to room temperature.
- 3. You will need a wide-necked Thermos flask.
- 4. Pour the cooled coconut milk mixture into the Thermos flask.
- 5. You will also need 1tbsp shop bought coconut yoghurt or the contents of 1 probiotic capsule (buy from health food shops). Stir the yoghurt or probiotic into the coconut milk mixture. Put the lid on the Thermos and leave to ferment for at least 8 hours or overnight – perferably for 24 hours. Then put in the fridge to fully set.
- 6. Ideal served over banana chocolate pudding (shown here) or on most vegan desserts.
